Lilac Syrup

This was a first for me.  But it turned out lovely, has great floral notes, but not overpowering and the color is so pretty.

Lilac Syrup

Perfect for spring. Floral and herbal notes.

  • 4 cups lilac florets (flowers removed from stem and green)
  • 2 cups water
  • 2 cups sugar (granulated)
  • 1 tablespoon lemon juice
  1. Gather lilac flowers and remove the blossom from the stems and any green, as they can turn the syrup bitter.

  2. Wash blossoms under cold water and shake to remove any excess

  3. In pot add florets and water.

  4. Bring to boil and reduce heat and let simmer for 5 minutes

  5. Cover and let steep for several hours.

  6. Afte steeping strain florets out with fine mesh sieve pressing the petals against the sieve to remove any moisture.

  7. Return liquid to pan and add sugar, bring to boil and let gently boil for about 5 minutes.

  8. Remove from heat and let cool.

  9. Add lemon juice to preserve and brighten color.

  10. Enjoy in iced tea, lemonade, or over pancakes!
