Baklava Cookies
Another Honey inspired recipe that Casey used to feed the members at a Olympia Beekeepers Assocation meeting. She upsized the batch and made at least six dozen cookies. This recipe is makes a couple of dozen. They are dainty little cookies, only a bite or two in size.
Ingredients
The Cookie
- 1 cup Sugar
- 0.5 cup Butter Room tempature, so soft.
- 2 Large Eggs
- 1 teaspoon Almond Extract
- 1 teaspoon Vanilla Extract
- 2.25 cups All Purpose Flour
- 1 teaspoon Baking Powder
- 0.5 teaspoon Salt
Topping
- 3 tbsp Sugar
- 2 teassppons Cinnamon
- 0.5 cup Honey
- 0.75 cup Walnuts
Instructions
The Cookie

In a stand mixer bowl, cream sugar and butter until blended.

Beat in the eggs, one at a time, and extracts.

In another bowl, whisk flour, baking powder and salt.

Gradually beat dry ingredients from second bowl into creamed mixture. Mix until dough like.

Wrap doughand refrigerate until firm enough to form into balls, about 30 minutes or so.
Topping

Chop up walnuts for sprinkling.

Combine sugar and cinnamon, mix thoroughly. This will be sprinkled on to cookies.
Bake the Cookies

Preheat oven to 375°.

Shape dough into 1 inch balls.

Bake 8 minutes.

Pull from oven. Press a deep indentation in center of each cookie with the back of a rounded teaspoon.

Fill each indentation with honey and walnuts; sprinkle with cinnamon sugar.

Return to oven and bake until edges begin to brown, 7 to 9 minutes longer.

Cool on pans briefly. Then remove to wire racks to cool.
