Nathan and Casey joined the Cask Club at Heritage Distilling here in town and set out to make a delicious whiskey using Nathan’s honey and Casey’s sourced Grade A Madagascar Vanilla beans and boy did we deliver. Its pretty amazing according to anyone who has tasted it from our rapidly emptying one bottle (don’t worry, we requested to bottle more,) but in the meantime Casey also created a great old fashioned to highlight it and the flavors of the season. Spiced Honey Old Fashioned
Perfect for the cool fall weather and gathering with friends. Not too sweet with flavors reminiscent of the holidays
Ingredients
Spiced Honey
- 1/2 cup Honey
- 1/2 cup water
- 2 sprigs Rosemary plus extra for garnish
- 2 sticks Cinnamon
- 1 tbsp Cardamom or 1/2 tsp ground
- 1 inch fresh ginger sliced and peeled
- Zest of One Orange
Old Fashioned
- 1.5 oz Whiskey Honey Vanilla, or Swantown Innsanity
- 1 tbsp Lemon Juice
- 1 tbsp Orange Juice
- 1-2 dash Orange Bitters
- 1 tbsp spiced Honey
Instructions

In small pot add ingredients and bring to small boil

Allow to boil (try to avoid rolling boil so honey doesn't burn), for 2-3 minutes so spices infuse.

Remove from heat and allow to cool to room temperature before straining. You can reserve the cinnamon stick for garnish. This is enough syrup to make 4-6 drinks.
Old Fashioned

In cocktail shaker, combine honey syrup, whiskey, lemon juice, orange juice and bitters. Add Ice and shake

Strain into glass.

Garnish with rosemary. orange twist and cinnamon stick

For a frosty look to your rosemary, after rinsing coat with sugar and allow to dry.
